So off to the internet I go. I have a few sites I go to in cases like this, but recently I came across The Kind Life with Alicia Silverstone. What a wonderful site for not just food, but everyday living and the kindness for all of life (hence the name). Although I haven't read the book, apparently it is also a diet one might try. On the site was a recipe titled, "The Best Vegan Pancakes" in the Kind Life Community Forum. So after a quick look at the ingredients, I knew we were good to go.
I printed off the recipe and handed the list to Nicholas. His reply was, "but are these regular (there's that word again) pancakes?" Yes, honey, these are going to be great...or at least I hope...was what I was thinking and trying to convey. Nicholas collected all of the items and we were ready to pour, mix and stir. What a blast he had! And then to top it all off, he got to flip a few. They were beautiful! No, they were B E A U T I F U L! And they were good. And they tasted just like
R E G U L A R pancakes.
In the end, his breakfast was healthy, vegan and the best pancakes he had ever had. I have to agree. Processed By Mama got a huge high five that morning! I'm gonna take it and see if we can't do something like this again!
Here is the recipe...
The Best Vegan Pancakes (From The Kind Life)
Ingredients (serves 2)
1 cup flour (whichever kind you prefer)
1 tablespoon sugar (I used agave syrup)
2 tablespoons baking powder
1/8 teaspoon salt
1 cup soy milk (I used almond)
2 tablespoons vegetable oil
Set the element with a pan to a medium heat
Combine dry ingredients; be sure to use two tablespoons for the baking powder
Add soy milk and oil to the mix and mix it all up
Cook the pancakes as per usual - wait till bubbles form in the middle of pancake and flip
Wrap the pancakes up in a clean tea towel while you cook the rest to keep them warm and soft (I have a warmer on my stove, so I used that.)
